It’s holiday season and that means a party with friends and family, think we all can definitely agree that desserts play a crucial part in making this part of the year extra memorable. So with that in mind, we would like to share with you a simple treat you can make yourself, courtesy of none other but Mom’s Kitchen! It is not only the party-goers who will love the desserts – the host will too! This dessert is so much fun because it doesn’t require any oven, it’s truly a no bake easy to make cake and it's vegan friendly too. Also, look at this color combination, its festive! With only few ingredients they are easy to make and simply delicious!

Recipe - Dikino Oko / Cheery Kiss

Ingredients

250g ground nuts (walnuts, almonds, hazelnuts - use any mentioned or mixture of all)

250g powdered sugar

2 medium size eggs (vegan option = use vegan eggs)

2 packs of vanilla sugar (16 grams)

1 medium size lemon (use zest & juice)

1 jar of canned cherries

Preparation

Before you start, take a tray approximately 22cm in diameter, so you can arrange your sweets as you are completing them.

Take a mixing bowl, any one you can find that can fit the above mentioned ingredients, think in terms of 0.5kg ingredients and room to spare for mixing.

In the mixing bowl, put ground nuts and add powder sugar, lemon juice, vanilla sugar, grated lemon zest and 2 eggs.

Add first, half of the lemon juice and slowly add more if needed to get the right consistency, should be soft but not runny so you can hold it firmly in your hand.
Pro tip: in case the mixture becomes much too soft you can add ground biscuit.

Mix all of the ingredients by hand or with a fork, do not use a mixer, it is preferable if you are mixing with hands, that your hands are cooled, wash your hands in cold water prior to mixing.

Once you have mixed all ingredients together and created a cohesive mixture, you can start prepping your cake.

Take about half a tablespoon of mixture and make a ball from it with your hands, then press with your finger to create indentation, place cherries in the indentation and that’s it!

When done with preparation, put the tray with the sweets into the fridge overnight, do not cover the tray or sweets, this is to help them get more firm texture.
